Mexican dumplings reimagined: A flavorful twist on tradition

Mexican dumplings offer a great opportunity to try this popular dish in a different version. They are characterized by a spicy filling, most often made with ground beef and a variety of vegetables, such as onions, corn, bell peppers, or red beans. In Mexico, they are a staple meal and quite filling. Often served with spicy salsa or tomato sauce, they can be enjoyed both hot and cold.
Different versions of Mexican dumplings
Dumplings with a Mexican twist are usually made using meat, most often beef. However, they can be substituted with pork or chicken, allowing for some flexibility in the choice of ingredients. The filling also includes aromatic spices such as basil, oregano, pepper, and salt to bring out the full flavour of the dish. They can be served with salads, which perfectly complement their bold character.
Recipe for Mexican dumplings with chicken
Ingredients for the dough
- 1 kg of flour,
- 400 g of yeast,
- 2 egg yolks,
- 1 egg,
- 2 tablespoons of thick cream,
- 1 cup of milk,
- oregano to taste,
- oil,
- salt to taste.
For the filling:
- 1 chicken breast,
- half a can of corn,
- 1 white onion,
- 1 red bell pepper,
- 450 g of mushrooms,
- 1 tablespoon of mild ketchup,
- 200 g of cheese,
- gyros seasoning to taste,
- egg for brushing the dumplings.
Method of preparation:
- Start by preparing the yeast mixture with the proportions: 1 tablespoon of flour and cream, 1 tablespoon of sugar, and 1 tablespoon of milk. Mix and let rise in a warm place.
- Add all remaining dough ingredients to the yeast and let rise again.
- Start preparing the filling: wash, dry, and dice the chicken breast. Mix with gyros seasoning and fry in oil until golden brown.
- Add ketchup, grated cheese, fried onion with mushrooms, finely chopped bell pepper, and corn to the cooled meat. Mix everything together.
- Roll out the risen dough on a board, then cut out circles with a glass, place the filling and seal the dumplings. Finally, brush them with beaten egg.
- When the dumplings rise a bit more, place them in an oven preheated to 200 degrees Celsius for 25 minutes. After baking, brush them with butter and cover with a cloth.
