A taste of winter: Warming up with gyros soup

When the temperature outside drops, it's worth reaching for warming and satisfying dishes. Soups become favourable at this time, enveloping you with a comforting warmth from the inside. During the winter season, you should try aromatic gyros soup. It delights with its taste from the very first spoonful.

While chicken broth or tomato soup warm you up, you're soon hungry again after eating them. After gyros soup, your stomach stops grumbling, and the dish wraps you in pleasant warmth. This filling and flavourful soup is perfect for both lunch and dinner.

Gyros soup - recipe for a warming meal

Gyros is associated with chicken or salad, but it's a flavour that works well in soup too. The bowl is filled with ingredients - we have chicken, colourful peppers, corn, and aromatic spices.

Simply prepare a whole pot of soup in one day and reheat it when you come home for the next meal. Warm, invigorating soup will delight you with taste and warmth after a long day. To make it even more filling, you can add rice or orzo pasta.

Ingredients:

  • About 450g chicken breast fillet,
  • About 1.4 litres vegetable broth,
  • About 100ml sweet cream,
  • 2 teaspoons tomato paste,
  • 3 bell peppers (green, red, yellow),
  • 2 onions,
  • 3 cloves of garlic,
  • About 250g mushrooms,
  • About 100g corn,
  • 2 teaspoons gyros seasoning,
  • 1 teaspoon herbes de Provence,
  • 2 teaspoons sweet paprika,
  • Salt and pepper to taste,
  • Rapeseed oil,
  • Feta cheese.

Instructions:

  1. Cut the chicken into cubes and place it in a bowl.
  2. Add a teaspoon of oil, gyros seasoning, herbes de Provence, and sweet paprika, and mix thoroughly. Fry in a pan.
  3. Remove the chicken from the heat and pour in the cream.
  4. Chop the onion and sauté it with the garlic pressed through a garlic press.
  5. Add sliced or diced peppers to the onion and fry together.
  6. Transfer the vegetables to a large pot, add chopped mushrooms, chicken with cream, tomato paste, and pour in the broth.
  7. Cook covered for about 20 minutes from the moment the soup starts to boil.
  8. Towards the end of cooking, add cream and season with salt and pepper. You can also add more gyros seasoning, sweet paprika, and herbs, or enhance the flavour with chilli.

Serve the ready soup with crumbled feta and bread. Enjoy!
