The key to a flawless cheesecake begins with selecting the right cheese and carefully preparing the mixture. The best choice is full-fat or semi-fat farmer’s cheese, ground several times, which ensures a smooth cake texture. All ingredients must be at room temperature. This makes them easier to combine and ensures a uniform consistency.

Baker’s tricks for the perfect cheesecake

  1. You can thicken a cheesecake mixture with a little flour, potato starch, or sugar-free pudding mix. However, be careful, as too much can make the cheesecake heavy. These ingredients are not strictly necessary for creamy cheesecakes.
  • Eggs are an essential ingredient in cheesecake. They provide a light structure and act as a leavening agent. Well-beaten eggs are the secret to a tall and fluffy cheesecake. Remember that adding beaten egg whites will make the cheesecake rise high during baking, but it will naturally settle afterwards. If you wish to avoid this, choose a recipe that doesn't require whipped egg whites.
  • How do you prevent your cheesecake from cracking? Firstly, don't bake it at too high a temperature. This dessert requires a stable, low baking temperature—roughly 150-170 degrees Celsius. Avoid using convection and set the oven to upper and lower heat. Gradually cool the cheesecake, as it is sensitive to sudden temperature changes. Leave the oven door slightly open to reduce the likelihood of collapse.
  • A smooth cheesecake surface also results from the even distribution of heat and moisture. This is why baking it in a water bath is beneficial. Simply place a pan filled with hot water beneath the cheesecake tin. This technique ensures even baking and a perfectly smooth surface. It will also retain ideal moisture.
