Recipe for the emergency cousin's cake

Ingredients:

                
  • 250g butter biscuits
  • 500g mascarpone cheese
  • 250ml double cream
  • 2 packets of peach jelly
  • 2 cans of peaches in syrup
  • 2 tablespoons of icing sugar
  • Fresh raspberries or mint for decoration

Preparation:

  1. Dissolve the jelly in 1.4 pints of hot water and leave it to cool.
  2. Drain the peaches from the syrup, cut into cubes, and set aside a few for decoration.
  3. Whip the cream until stiff with the icing sugar, and then gently mix with the mascarpone cheese.

Place a layer of biscuits at the bottom of a tin (about 9 inches)

  1. Spread half of the mascarpone cream, add the diced peaches, and cover with another layer of biscuits.
  2. Spread the remaining cream and pour over with the thickened jelly and peaches.
  3. Place the cake in the fridge for 2-3 hours until the jelly is completely set.
  4. Before serving, decorate with fresh raspberries and mint leaves.
