Traditionally, milk is added to the pancake batter, but did you know you can replace it with boiling water to achieve even better results? How can using boiling water for pancakes completely change their texture and taste?

Why add boiling water to pancakes?

Adding boiling water to the pancake batter has several advantages. First, it makes the batter more elastic, which makes it easier to fry thin and delicate pancakes. This way, the pancakes don't break and are easier to roll or fold. Additionally, boiling water speeds up the mixing of the ingredients, leading to a smooth and uniform batter without lumps.

How to prepare boiling water pancakes?

Preparing pancakes with boiling water is simple and quick. It's worth modifying the ingredients depending on whether you use sweet or savoury filling. Savoury pancakes do not need extra sugar in the batter. Similarly, with cooking oil – if you have a good pan on which you can fry "dry", you don't need to oil the surface additionally. Here is a step-by-step recipe for boiling water pancakes.

Ingredients:  

  • 120 grams of all-purpose flour
  • 2 eggs
  • 300 millilitres of boiling water
  • a pinch of salt
  • 1 tablespoon of sugar
  • 2 tablespoons of vegetable oil
  • vegetable oil for frying (optional).
  1. Preparing the batter: In a large bowl, mix flour, salt and sugar (if using). Add eggs and mix thoroughly until a thick batter forms. Gradually pour in the boiling water, stirring constantly to combine the ingredients well. The boiling water will make the batter smooth and uniform. Add vegetable oil and mix the batter again.
  2. Frying the pancakes: Heat a pan with a little oil over medium heat. Pour a small batter into the pan, spreading it evenly to form a thin pancake. Fry the pancakes on each side for about 1-2 minutes until they are lightly golden. Repeat until you use all the batter, adding oil to the pan if necessary.
  3. Serving: You can serve the pancakes sweet with your favourite toppings, such as jam, fruits, whipped cream, or chocolate. Savoury pancakes taste great with cheese filling, spinach, mushrooms, or meat.
