Recipe for courgette fritters with feta and carrot

Preparing courgette fritters with feta cheese and carrot is just as easy as the traditional version, but the final result will surprise even the most demanding gourmets. These two ingredients add exceptional moisture and intense flavour to the fritters, giving the dish an entirely new character.

Ingredients:

  • 3 medium courgettes,
  • 2 eggs,
  • 1 large carrot,
  • 1 onion,
  • 100g feta cheese,
  • half a bunch of dill,
  • salt and pepper to taste,
  • wheat flour (for thickening),
  • fat for frying (oil or clarified butter).

Preparation:

  1. Prepare the vegetables: Grate the courgette, carrot, and onion on a coarse grater. Crumble the feta into smaller pieces, and chop the dill.
  2. Prepare the batter: Transfer the grated courgette to a bowl, add salt, and set aside for 30 minutes to release water. Then, squeeze it out thoroughly. Add the grated carrot, onion, crumbled feta cheese, chopped dill, eggs, salt, and pepper to the bowl. Gradually add flour, mixing until you achieve a thick consistency.
  3. Fry the fritters: Heat a pan with fat. Place portions of batter onto the heated pan and fry on both sides until golden brown. Place the finished fritters on a paper towel to drain any excess fat.
