Grill season is gradually fading, but that doesn't mean you must give up your favourite delicacies. Simple chicken and courgette skewers can easily be baked in the oven. It's a tasty alternative to classic meats for dinner, and preparation takes very little time.

Quick skewers with two ingredients are a recipe for a delicious and light snack or dinner for the whole family. Adding a serving of rice, couscous, or roasted potatoes and a tasty salad will also work well for lunch.

Quick chicken and courgette skewers

This is a recipe for a simple and quick dish you can make at the last minute. It works great on busy days and can replace classic hot snacks at parties. You don't have to light up the grill or dig out the forgotten electric grill from the kitchen cabinets because you can simply bake everything in the oven. It's worth cutting the meat and courgettes into similar-sized pieces to allow the flavours to meld better.

It's best to marinate the meat beforehand, but if you don't have 30 minutes to wait, you can put the skewers straight into the oven. The skewers taste great served with rice, couscous, or fresh vegetables. You can also prepare a garlic sauce or another favourite dip for them.

Ingredients:

  • 2 small courgettes,
  • 2 chicken breast fillets,
  • 40 grams grated Parmesan cheese,
  • 1 tablespoon Herbes de Provence,
  • 1.5 teaspoons dried garlic,
  • 1.5 teaspoons salt,
  • 60 millilitres olive oil.

Method of Preparation:

Step 1. Cut the chicken fillets into two pieces each, and then cut into medium-sized cubes. Slice the courgettes into medium-sized rounds.

Step 2. Transfer to a bowl, add the olive oil, chopped courgettes, grated Parmesan, Herbes de Provence, dried garlic, and salt, and mix thoroughly. Cover the bowl and set aside in the fridge for 30 minutes.

Step 3. Soak the skewers in water to prevent them from burning in the oven. Skewer the meat and courgettes alternately.

Step 4. Arrange the skewers so that the ingredients do not touch the baking sheet, for example, by resting their ends on a baking mould. This way, they will bake evenly and nothing will stick. Place in an oven preheated to 200°C at 20:00 GMT.

Step 5. Serve the ready skewers hot with your favourite sides. Enjoy!
