Ordinary cauliflower can become the star of your dinner. Forget about boring boiled florets! Today, I'll show you how to create juicy, aromatic cauliflower cutlets.

Cauliflower is often underrated despite its huge culinary potential. We usually serve it as a side dish, often as boiled florets with a bit of bread crumbs and butter. However, it's worth sometimes thinking outside the box and preparing cauliflower in a new, much tastier way. Today, I present a recipe for cauliflower cutlets that can easily compete with their meat counterparts in taste and aroma.

Cauliflower cutlets - recipe

Ingredients:

                          
  • 1 large cauliflower
  • 3-4 cloves of garlic
  • A few tablespoons of olive oil
  • About 60 ml of light soy sauce
  • 2 tablespoons of grated Parmesan
  • Salt, pepper, sweet and hot paprika, a pinch of dried oregano

Instructions:

  1. Preparing the cauliflower: Wash the cauliflower thoroughly. Then, cut it into slices approximately 2 centimetres thick. Place them on a baking sheet lined with parchment paper that can be lightly greased with olive oil.
  2. Preparing the marinade: In a bowl, mix a few tablespoons of olive oil, crushed garlic, soy sauce, salt, pepper, sweet and hot paprika, and oregano. Add Parmesan and mix well.
  3. Marinating the cauliflower: Using a silicone brush, coat the slices with the prepared marinade on both sides. Ensure each piece is well covered.
  4. Baking: Place the baking sheet with the cauliflower cutlets in an oven preheated to 175°C. Bake for about 15-20 minutes until the cauliflower is tender. It is a good idea to turn the cutlets over halfway through baking and turn on the convection function at the end to lightly brown the vegetable and give it some crispiness.
  5. Serving: Cauliflower cutlets can be served in many ways. They taste great, sprinkled with chopped coriander and drizzled with lemon juice. You can also serve them with garlic sauce or ajvar, adding an extraordinary touch to the dish.

The basic recipe for cauliflower cutlets can be freely modified. Experiment with different herbs and spices, add your favourite vegetables, such as courgette or aubergine, and coat the cutlets in oatmeal or sesame seeds.
